MicroJiva Dairy (MJD) Cheese Starters is a selected blend of cultures supplemented with probiotic bacteria to produce high-quality and health-promoting cheeses. MJD Cheese Starters can each be used to culture several types of cheeses for all tastes. We provide premium ripening cultures including B. linens, Propionibacteria and DH yeast and starters for all types of cheese. Consumption of cheese made from MJD Cheese Starters can improve overall health through microbial benefits, anti-carcinogenic and anti-thrombotic effects.

We offer high-quality kefir starter cultures in various forms, tailored to your needs for marketing and distribution. With more than 3,000 bacterial strains available, our kefir products are made with carefully balanced formulas for great consistency and taste.

We provide four types of cheese starters:

  • Mesophilic Homofermentative (MJD-CC-H)
  • Mesophile Arom Type B (Heterofermentative) (MJD-CC-B)
  • Thermophile Type C (MJD-CC-C)
  • Thermophile ST-Z (Pasta Filata) (MJD-CC-STZ)

MJD Cheese Culture Mesophilic Homofermentative can be used as a cheese starter for various types including blue cheese, cottage cheese, chevre cheese, farmhouse cheddar, cheddar, cream cheese, colby and feta cheese.

MJD Cheese Culture Mesophile Arom Type B (Heterofermentative) can be used as a cheese starter for various types including general fresh cheese, soft cheese, cottage cheese, sour cream, goat cheese, cultured butter and fermented buttermilk.

MJD Cheese Culture Thermophile Type C can be used as a cheese starter for various types of Italian and Alpine style cheeses including Gruyere, Fontina and Beaufort.

MJD Cheese Culture Thermophile ST-Z (Pasta Filata) can be used as a cheese starter for various stretched-curd or Pasta Filata cheese types including high- and low-moisture Mozzarella, Provalone, Caciocavallo, string cheese and pizza cheese.

All MJD Cheese Starters are available as powder sachets.

Suggested Use:

Quantity: The package contains 10 individual sachets of 10 grams of probiotic granules in each, for a total of 100 grams.

Directions: Allow powder to come to room temperature prior to use. Add sachet contents directly to milk, without preliminary activation. Mix thoroughly to evenly distribute culture. Propagate the cheese according to the temperature requirements for the specific culture type: Mesophilic temperature range (20 to 30°C) and Thermophilic temperature range (25 to 50°C).

Storage Instructions: Store cultures in the freezer for best preservation.
